Carbohydrates by difference refer to the method by which they are measured. It has been difficult in the past to measure carbohydrates exactly and so they used a method which involved removing the nutrients they could and then weighing the difference. Carbohydrate by difference is the sum of: nutritionally available carbohydrates (dextrins, starches, and sugars); nutritionally unavailable carbohydrate (pentosans, pectins, hemicelluloses, and cellulose) and non-carbohydrates such as organic acids and lignins.

Carbohydrates are primarily used as energy by our body. Carbohydrates are considered by some as non essential foods as we can get our energy from fats and proteins. However the brain needs glucose for energy which is most readily available from carbohydrates, for this reason carbohydrates should play a role in your diet.
